Palatinose is a naturally occurring disaccharide (honey, molasses). Commercially, it is produced from sucrose (our common table sugar) by an enzymatic rearrangement. Like sucrose, Palatinose consists of two coupled monosaccharides, glucose and fructose. There is, however, an important difference: in Palatinose the two monosaccharides are coupled via a 1,6-glycosidic bond, which is enzymatically cleaved (hydrolysed) with much more difficulty than the 1,2-glycosidic bond in sucrose. As a result, Palatinose is only slowly digested, and thereby causes a low stimulus for insulin secretion (it is considered safe for diabetics).
